CARROT GINGER DRESSING

Change your habits and sparkle your dish with this delicious dressing, ready in minutes.

Ingredients
 

  • 2 large carrots cut into pieces
  • 2-3 cm piece of fresh ginger
  • 1 garlic glove
  • 1 tbsp white rice vinegar
  • 1 ½ tbsp sweet white miso, from Clearspring
  • 1 lime juice
  • 2 tsp tamari sauce
  • 1 tsp roasted sesame oil , (or normal sesame oil if you don't have)
  • 1 tbsp sesame seed for topping, roasted (optional)
  • ¼ cup water , (or more if you need)
  • ¼ cup soft/silk tofu** , (optional)

Instructions
 

  • Peel and cut the carrots, ginger, garlic into pieces. Place them in your blender.
  • Add the other ingredients (rice vinegar, miso, lime juice, tamari, sesame oil and water). Blend until well combined, add a little bit more water if you need to.
  • Optional: add a piece of tofu for a richer and creamier consistency.

Notes

*I am a huge fan of the carrot's sweetness in combination with the light spicy ginger. If you are not the biggest ginger fan start with a small piece of ginger.
** if you want to have a creamier consistency, you can reduce the water and add a small piece of soft or silken tofu to the dressing.
