1 tsproasted sesame oil , (or normal sesame oil if you don't have)
1 tbspsesame seed for topping, roasted (optional)
¼cupwater , (or more if you need)
¼cupsoft/silk tofu** , (optional)
Instructions
Peel and cut the carrots, ginger, garlic into pieces. Place them in your blender.
Add the other ingredients (rice vinegar, miso, lime juice, tamari, sesame oil and water). Blend until well combined, add a little bit more water if you need to.
Optional: add a piece of tofu for a richer and creamier consistency.
Notes
*I am a huge fan of the carrot's sweetness in combination with the light spicy ginger. If you are not the biggest ginger fan start with a small piece of ginger.** if you want to have a creamier consistency, you can reduce the water and add a small piece of soft or silken tofu to the dressing.
