1 ½tbspdate syrup or maple syrup , (or honey for the non vegan)
2 tbspchia seeds
1pinchvanilla powder or extract
Instructions
Combine blueberries and water in a pan over medium-high heat and bring it to a boil. Stir it frequently. Then, reduce heat to a simmer.
Add to the pan 1 ½ Tbsp of date syrup. Stir well.
Mash the berries with a fork, leaving some berries whole for the jam’s texture.
Stir in 2 Tbsp of chia seeds and vanilla extract. Reduce heat to low. Simmer for about 2 minutes, stirring continuously. Then set on the side to cool down.
It keeps for 4 days in the fridge.
