It’s an easy vegan vanilla cookie recipe (low in gluten) that I share here !
It’s more like a Christmas cookie recipe (but not only for Christmas, hey hey), inspired by a vanilla cookie recipe from Europe where people usually use a lot of butter and sugar. Obviously, I’ve replaced butter and sugar with healthy ingredients, so I can tell that those healthy cookies are packed with goodness.
What’s inside?
A 7 ingredients recipe with 3 healthy flours: almond, buckwheat, and spelt flours.
It has also honey or maple syrup, coconut oil, almond butter, and vanilla. And, the whole family loves it when I deep them in melted chocolate. This is highly recommended. Check my fondant au chocolat recipe for all the details on how to melt chocolate in a bain-marie.
Let them cool down
At first glance, this healthy cookie dough might seem a bit fragile. Actually, they need a little time to cool down and firm up before you decorate them or place them in a container.
Definitely, the taste is worth the (little) time you’ll spend to cook these cookies.
Top Tip
Spelt flour is one of the main flour I like to use in the kitchen. Because it’s an ancient cereal grain and a distant cousin to wheat. Also, it is very low in gluten with a nutty, slightly sweet flavor.
Use spelt flour as a substitute for wheat or white flour when baking bread. Because spelt flour contains gluten (but less than wheat) and you are less likely to compromise the texture of baked goods.
Compared to wheat flour, spelt flour is richer in many nutrients, such as protein and minerals.

VEGAN VANILLA COOKIE RECIPE
INGREDIENTS
COOKIES
- 1 ½ cups spelt flour (150 gr)
- ¼ cup buckwheat flour (25 gr)
- ¼ cup + 1 tbsp almond meal (30 gr)
- 3 tbsp maple syrup - (or honey)
- 4 tbsp coconut oil, melted
- 1 tbsp almond butter
- 2 tsp vanilla powder
TOPPING
- 50 gr dark chocolate - (or more if you want to dip them entirely)
INSTRUCTIONS
- Preheat the oven to 160°C (fan).
- Combine all the cookies' ingredients together and mix them well.
- Let the dough sit for 15 minutes in the fridge. It is easier to form the cookies if the dough is firm.
- Form small balls with your hands (you have to press the dough a little bit) and place them on a lined baking sheet. Thoroughly press the ball a little bit more for a flat bottom.
- Place them in the oven for 12-15 minutes. Check them halfway through to make sure they don't go too brown.
- Take them out and let them cool down completely (approximately 15 minutes).
- Dip the bottom of the cookie (or the entire cookie) in melted dark chocolate for a delicious chocolaty flavor and let them cool down on a piece of waxing paper. Melt the chocolate in a microwave with a tsp of coconut oil or in a bain-marie.
