Vegan Black Charcoal Pizza Dough

Vegan Black Pizza

This seriously delicious black charcoal pizza dough recipe is actually as good  (if not better) than the regular version. I know it for certain because the kids love it !

The gluten in this pizza dough/crust is very low because I have mixed spelt flour with buckwheat flour. And it contains a lot of minerals and antioxidants as I use 2 types of unrefined flours here. I’ve added some activated charcoal for more benefits and for its reach (instagram worthy) black color.

Have you noticed that black is everywhere ?! This dough recipe is great for 2 medium size pizzas or 6 small (and I use to freeze the dough too, very easy).

Whenever I make my pizza, I love to add a green peas paste instead of the regular tomato paste. The kids won’t really notice the difference and it is a great way to hide some green vegetables in here.

For the topping, I’ll leave it up to your taste and I suggest here few of my healthy toppings.

Easy delicious green paste or whatever you prefer !

I’ve added the EASIEST green paste recipe ever to spread on your pizza dough (let’s say it’s a kind of pesto but nut free).

You only need to blend some basil leaves, green peas, garlic, olive oil & a splash of water. You can add 1/2 chili if you like it spicy ! This green base adds a slightly sweet basil flavor to the pizza and it’s totally addicting.

If you don’t feel like having this type of paste go for the healthier tomato paste you have handy, it will do the job too.

And for toppings ?

Here I have made a few of my favorite combinations with a lot of vitamins and greens. I am not a big fan of usual cheesy pizza (I know some people say I am kind of Woo-Woo), I prefer roasted veggies.

But do as you please. You can add any of your favorite toppings and some feta or any cheese if you prefer it this way.

I have another very tempting pizza dough recipe (completely gluten free this time and vegetarian), if you fancy to try it out, it’s a Cauliflower Pizza, Low Carb. Cheese and cauliflower are a bomb combo (kids say so).

Top Tip about charcoal

Activated charcoal is the new black ingredient. It seems to cleanse your system and to be a powerful detoxifier (and it doesn’t bring much to the crust in term of flavor). Remember that our grand-parents use to keep a bottle of charcoal to reduce bloating and gas.

You can use it to purify your skin and hair or to whiten your teeth. Have a look at pinterest on how to use activated charcoal at home (mask, shampoo, etc…) !

  • 175 ml water
  • 1 tsp active dry yeast
  • 1 tsp olive oil

GREEN PEAS PASTE in a whizz

  • 3 cups basil
  • 1 cup green peas - defrosted or fresh
  • 2 garlic cloves - grated
  • 1 tbsp olive oil
  • 1 tbsp water

TOPPING (1) for 2 small pizzas

  • Few spring onions
  • Few baby tomatoes, pricked
  • Few spinach leaves
  • zucchini, thinly sliced
  • Himalayan salt & freshly ground pepper, to taste

TOPPING (2) for 2 small pizzas

  • ¼ sweet potato, peeled and thinly sliced
  • ¼ beetroot, peeled and thinly sliced
  • 2 radishes and thinly sliced
  • 1 tsp dried herbs
  • Himalayan salt & freshly ground pepper to taste

TOPPING (3) for 2 small pizzas

  • ½ small zucchini (spirulized or peeled into ribbons)
  • 2 tbsp green peas, defrosted
  • 1/3 bell pepper, sliced
  • 10 mint leaves
  • Himalayan salt and fresh ground pepper to taste
  • ½ tsp Cayenne pepper

INSTRUCTIONS

PIZZA DOUGH

  • Mix the water and the dry yeast in a small bowl and stir well. Set aside.
  • Combine the buckwheat flour, spelt flour, charcoal and some fresh ground pepper in a large mixing bowl. Using a wooden spatula, stir them well until you have a uniform dark color and make a well.
  • Gradually add the water and knead for 2 to 5 minutes until the dough forms a ball (first using the wooden spatula then using your hands). Add more flour if it's very sticky to your hands.
  • Divide the ball into 2 medium pizza (or 6 small). Rub each dough with olive oil, put them back into the bowl and cover the bowl with a kitchen towel. Set aside for 1 to 2 hours to prove.
  • Prepare a silicone baking mat (or a piece of baking paper) and flour it. Flatten the dough with the palm of your hand first. Then roll the dough with a rolling pin. Move regularly the sides of the dough and flip it sometimes too to be sure that it doesn't stick to the mat and add more flour when needed. Create 2 medium pizza round (or 6 small pizza).
  • Preheat the oven to 180-185 °C (fan).

GREEN PEAS PASTE

  • Blend all the ingredients together in a food processor.
  • Add some green peas paste to each pizza dough.

TOPPING

  • Add the topping of your choice on each pizza.
  • Move the silicone mat (or baking paper) to the baking tray and bake for about 15 to 20 minutes. Enjoy.
