Does anyone is craving for some delicious refreshing mango popsicles? Mango is a natural for popsicles. It has an amazing texture and a delicate tropical taste.
Making your own popsicles is a lot more fun, especially for the kids. It’s definitely a super healthy snack idea.
Popsicles are a great way to upgrade the hot summer snack time. It is an opportunity to eat seasonal fruits that are so sweet and juicy and to avoid adding any sweetener.
How easy is this popsicles recipe?
This refreshing mango popsicles recipe is so easy. It requires only 6 ingredients : mango, lime juice, maple syrup, greek yoghurt and vanilla powder. I always change the type of yoghurt I use in this recipe. If you prefer a non dairy milk yoghurt, coconut yoghurt or almond yoghurt are perfect too.
I like to bring my mango puree into a boil for 1-2 minutes because it enhances its sweetness and tropical flavor. But you can skip this part and pour it raw into your mold.
You can use any type of molds, ice-cube trays or paper cups and you just need to insert a wood stick as it is thick enough ! You can even involve the kids in making them !

Top Tip about how to store your popsicles
You can just leave them in the mold and take them out one by one. But if you keep them longer than 1 or 2 days in your freezer, you want to keep them tastier longer.
My favorite storage is to remove the popsicles from their mold by pouring hot water over the mold to loosen and to wrap them in plastic wrap or recycle beeswrap. Then you store them in an airtight plastic bag or container in the freezer for 1 to 2 weeks and they still look and taste fabulous.

REFRESHING MANGO POPSICLES
INGREDIENTS
- 1 ripe mango
- 1 tsp lime juice
- 1 tbsp maple syrup - (optional)
- 1 greek yoghurt of 170 gr *
- 2 pinches vanilla powder or ½ vanilla pod
INSTRUCTIONS
- Cut the mango into pieces and place them into your food processor. Add the lime. Pulse until smooth.
- Poor it into a pan and bring it to a boil for 1 to 2 min. Add if necessary 1/2 Tbsp of maple syrup and mix. Set aside and allow it to cool down. (Skip the boiling part if you don't have time. But it will enhance the mango sweetness and texture).
- Mix the greek yoghurt with 1/2 Tbsp of maple syrup (optional) and vanilla powder. Stir it well until well combined.
- Poor into the mould and alternate with the mango puree. Tap gently the mold into the counter to remove air bubbles. Freeze for at least 4 hours.
