As you know, I am totally addicted to pesto (or healthy plant-based spread). Therefore, I have explored this new rich red pesto recipe with dried tomato and spinach. It is now a home best seller, so I am sharing it with you on the blog. And it is a 15-minute recipe.
I am really happy with this healthy red pesto (or tomato spread) as it is super easy to prepare! Besides, it last for a long time in the fridge. And it needs only 6 ingredients which are all good for your body.
Ingredients list
For your next shopping list, all you need is walnuts, spinach, 4 dried tomatoes, basil, garlic, olive oil, lemon.
With walnuts and olive oil this tomato pesto is full of healthy fats. It is a very nutty pesto in taste with a sweet hint, thanks to the dried tomatoes. It’s divine with zucchini noodles or with fresh veggies ! You can use it as a tomato spread (I do that all the time). Or try it with some salad too or as a base for your pizza ! The possibilities are endless !

Top Tip
Walnuts contain vitamin E, folate, melatonin and antioxidants.
They are also an excellent source of anti-inflammatory omega-3 essential fatty acids. I have read that they help to reduce bad cholesterol in your body.

RED PESTO WITH DRIED TOMATO AND SPINACH
INGREDIENTS
- ½ cup walnuts
- 1 cup young spinach or spinach
- 4 dried tomatoes - (dehydrated in the sun) – if in oil, rinse them first
- 10 leaves fresh basil
- 1 garlic clove
- 3 tbsp olive oil
- 3 tbsp water
- ½ lemon juiced
- Himalayan salt and fresh ground pepper - to taste
INSTRUCTIONS
- Wash the spinach and the basil. Drain them well.
- Place all ingredients in a medium mixer (or a blender) and mix until well combined. If the pesto is still too dry put a little bit more water (one tbsp at a time) and mix it again. It’s ready !
