Lime Fudge Recipe, Easy And Satisfying Plant-Based Treat
Fudge falls (for centuries) between fondant icing and hard caramel. And my delicious lime fudge recipe is an easy one. Think of a satisfying plant-based treat. This easy-to-make snack is raw (no cooking required) and packed with fresh and delicious lime flavor. It is perfect for any sweet cravings.
How easy is this fudge recipe?
STEP 1
First, soak the macadamia and cashew nuts for at least 4 hours or boil them for 10 to 15 minutes. Then rinse them.
STEP 2
Blend all the simple ingredients with the soaked nuts :
- dessicated coconut
- dates
- lime + zest
- coconut oil
- coconut bliss (or cashew butter)
STEP 3
Finally line a square baking dish (21cm x 21cm) and flatten the dough. I like to use an extra parchment paper on top and flatten the dough with the bottom of a glass or using a small rolling pin. Make sure you flatten it equally.
STEP 4
Keep them in the freezer for 6 to 8 hours or overnight to harden. Take it out and cut into small bites with a sharp knife. I like to keep them in the freezer ready to be picked up at any time, with a perfect semi-hard, semi-soft texture that melts in the mouth.
Is this recipe entirely plant-based and vegan ?
Usually a fudge is a creamy candy with milk, sugar and butter. While my lime fudge is still creamy and soft, it has on the other side nutrient-dense ingredients : cashews, macadamia nuts (or more cashews), dessicated coconut, dates, lime juice, lime zest, coconut oil.
This lime fudge recipe is addictive but still plant-based, a new great addition to anyone looking for a healthy fudge, treat or bite.
More than that, it is a nutritive snack !

I usually store them in the freezer for minimum 10 days or even longer.
Making a big batch at once is for me brilliant. So I have always something to savor at every hour of the day that is healthy and with a lime twist. I just take them out of the freezer few minutes before to enjoy.
This is the best trick to not succumb to something unhealthy and by cutting them small, you’ll keep an eye on what you eat.
Can I keep them in the fridge instead of the freezer?
I love to keep them in the freezer for its medium soft texture. And when I need one delicious lime fudge, I take it out and enjoy. It can be before or after workout, or for breakfast.
If you keep it in the fridge or over the counter, the texture will be softer but still really enjoyable. Try what you love the most.
Why not wrap them like candy ?
This lime fudge recipe makes approximately 40 small bites. You can leave it as it is. But I love to wrap them in waxing paper like confectionary (it’s magic, kids love it) and it’s a great DIY gift too !

LIME FUDGE, EASY AND SATISFYING PLANT-BASED TREATS
Ingredients
- 1 ½ cups cashews, soaked for at least 4 hours
- ½ cup macadamia nuts, soaked for at least 3-4 hours (or replace by cashews)
- 1 cup dried dessicated coconut
- 1 cup dates, pitted (and soaked in warm water for 3 min if too dry)
- 1 lime juice, squeezed
- 4 tsp lime zest (or zest of 2 limes), finely grated
- 2 tbsp coconut oil , melted (microwave or bain-marie)
- 1 tbsp coconut bliss , melted (microwave or bain-marie) (optional)
Instructions
- Soak cashews for at least 4 hours or overnight. Soak macadamia nuts for at least 3 hours or overnight.
- Place all ingredients in a high speed blender and blend for 30 to 60 seconds or until you reach a sticky dough.
- Line a square baking dish (approx. 21 cm x 21 cm) with baking paper. Spread the mixture into it and press it down to be compact. You can use a piece of baking paper on top and roll a rolling pin to flatten the mixture (or the bottom of a glass).
- Put into the freezer for at least 6-8 hours or overnight.
- Using a sharp knife, cut into small squares and store them back in the freezer in an airtight container for 10 days or more. Take them out when you need something sweet (if too hard, let it warm up few minutes).
- I love to eat 2 or 3 for breakfast or as a snack.
