Sometimes, you just want something creamy, not chocolaty for dessert (for once, because you had some yesterday…) and with a sweet touch ! Then, this lemon curd chia cream and its sweet crunchy base is the answer.

First of all, the chia cream is deliciously smooth (different from a proper chia pudding because it’s not well set). This cream accompanies the base in a way that could not be better. Just imagine the combination of a smooth lemon touch, the sweet taste of a date base with the crunch of crushed Brazil nuts, yum !

On the other hand, this dessert is completely healthy : you’ll have the protein from the chia, the vitamin C from the lemon, the vitamins and fiber from the dates (only 3-4 dates per bowl!) and the magnesium (and more protein) from the Brazil nuts.

What about the recipe itself?

To make this delicious recipe, it only takes 20 minutes. Then, you put it in the fridge for 2 hours or overnight and voila !

LEMON CURD CHIA CREAM AND ITS SWEET CRUNCHY BASE

A chia cream (creamy creamy) and a base that tastes like candy !

Ingredients
 

BASE

  • 1 cup dates, eventually soaked in hot water
  • 3/4 cup brazil nuts (or whatever you have on hand)
  • 1 tbsp lemon zest, grated (approx. 1 lemon)
  • 1 pinch of Himalayan salt

LEMON CURD CHIA CREAM

  • 1 can coconut milk (full fat)
  • 1 freshly squeezed lemon (small)
  • 1 tbsp lemon zest, grated (approx. 1 lemon)
  • 3 tbsp chia seeds
  • 1-2 pinch(es) vanilla powder
  • 1-2 tbsp maple syrup (optional)

Instructions
 

BASE

  • If you can not break down easily the dates, soak them first in hot water for 3-5 minutes.
  • In the meantime, chop the brazil nuts roughly, using a blender. Set aside. Zest 1 lemon.
  • (If you’ve soaked the dates, remove them from water). Mash the dates with a fork until a chunky paste is formed. Add the nuts, the zest and a pinch of salt. Stir to combine, using a fork.
  • Press it slightly into the base of 6-8 serving dishes.

LEMON CURD CHIA CREAM

  • Use a whisker and mix well the coconut milk, the lemon, the zest, the vanilla and 1-2 Tbsp of maple syrup (optional) in a large mixing bowl.
  • Add 3 Tbsp * of chia seeds and whisk for 1-2 minutes to distribute evenly the chia seeds into the milk. Let it sit for 1-2 minutes and whisk again for few minutes.
  • Pour the mixture over the base and refrigerate for at least 2 hours or overnight. Decorate with coconut flakes, etc… and serve !

Notes

* I like it creamy and not well set (like a chia pudding might be). If you want to add more chia seeds for a well set pudding, do not exceed a total of 5 Tbsp of chia seeds for the whole recipe.
