Raw Brownie with Ganache

If I have to pick one of my favorite healthy dessert made with raw cacao, it would be a raw brownie. And if you add this decadent ganache on top of it then it’s heaven. This raw brownie with ganache is the perfect recipe for those days when you just need a brownie !

And when I want to impress my friends with a healthy dessert, I always bring this delicious brownie. It’s a best seller, a success story and a hit !! People can not believe it is full of the good things and it is RAW.

So about this unbaked brownie with ganache or raw brownie, the recipe takes only 20 minutes to prepare and it is gluten free, dairy free, egg free, vegan and soy free. Yep!

This unbaked/raw brownie taste like a candy bar, so soft and chocolaty. It is insanely good and full of nutrients thanks to its ingredients.

Ganache or not?

The vegan chocolate ganache is delicious on top of this amazing brownie. But if you run out of time, you can make this raw brownie without ganache or replace the vegan ganache with melted chocolate (bain-marie or microwave) of your choice.

How to add superfood to your diet?

For topping, I like to add dried berries over the fresh ganache.

This brownie is already packed with raw cacao (a superfood itself) but to increase your daily intake of nutrients, it’s a great opportunity to add goji berry, dried mulberry, dried acai berry, etc… for topping too. It’s a great addition to your diet and it tastes very good with this raw brownie with ganache !

To avoid any lack of vitamins and minerals, I always take every opportunity to add superfood into my lifestyle (I hate to say diet).

Raw Brownie with Ganache

This is a non-guilty dessert with 6 ingredients only. If you've never cooked a raw brownie, try this amazing recipe with or without ganache !

INGREDIENTS

BROWNIES

  • 1 cup pitted dates, fresh and moist (7-8 Medjool dates) - (soaked in hot water for few minutes to have them moist)
  • ½ cup raw cacao powder
  • 1 ¼ cups walnuts - (or any nuts you have)
  • 1 tbsp coconut oil, melted
  • 1 pinch Himalayan salt

GANACHE (optional)

  • 2 tbsp coconut oil
  • 2 tbsp almond milk - (at room temperature)
  • 1/4 cup raw cacao powder
  • 2 tbsp maple syrup

TOPPING (optional)

  • Few dried raspberries, cacao nibs
  • 1 pinch Himalayan salt

INSTRUCTIONS

BROWNIE

  • To make the brownie, put all the ingredients together in a food processor and pulse until it is well combined and smooth, for approx. 1 minute.
  • Line a rectangle loaf pan (24cmx13cm) with parchment paper.
  • Transfer the dough to pan and press very firmly until it is well distributed in the pan (using your hands first, then cover the dough with another parchment paper and press with the bottom of a glass to reach a thin layer of 0,5 cm approx.). Set aside.

GANACHE (optional)

  • Heat a small pan over medium heat and add the coconut oil, almond milk, raw cacao and maple syrup. Using a whisker, whisk constantly until you reach a smooth texture (liquid).
  • Pour evenly the ganache over the brownies (moving the pan to help the distribution of the ganache) and sprinkle any topping you like and a pinch of Himalayan salt.
  • Refrigerate for 1 to 2 hours before cutting into squares to serve.

Notes & Tips

*if the dates are too dry, soak them in hot water for 3-4 minutes. Throw the water and use the soft dates.
