Top Tip
What about pumpkin seeds?
They are the edible seeds of a pumpkin and they are concentrated with a lot of vitamins, minerals and amino-acids. They contain a high amount of copper, manganese, potassium, calcium, iron, magnesium, zinc and selenium. Pumpkin seeds carry good-quality protein. Apparently 100 g seeds provide 30 g or 54% of recommended daily allowance of protein.
It makes them very important for sportsmen and vegans who are looking for an alternative protein source.

INSTRUCTIONS
- Preheat the oven to 160C (fan).
- Using a small mixer, grind your pumpkin seeds into flour.
- In a large bowl, mix well all ingredients together using a spatula. Then on a chopping board, form a long roll with the mixture using your hands.
- Wrap the roll into cling film (or waxing paper) and keep the dough in the fridge for 20 minutes.
- Take the roll out of the fridge and unwrap it.
- Take a sharp knife and cut down slices approx. 1 cm thick.
- Place the slices on a lined baking sheet and form a nice cookie with your hands. Eventually, use the bottom of a glass to flatten nicely each cookie.

- Take them out and let them cool down.
