This is a super simple matcha chia seed pudding recipe for a change, and it’s so good !

Chia (seed) pudding is one of my regular breakfast routine. It has an incredible creamy texture and it’s packed with nutrients.

These minuscule seeds are simple to make into a pudding because they absorb up to 10 times their weight in water!

Matcha in my pudding? Yes please !

Matcha is not only for drinking you can bake it or use it raw in a chia pudding. In this healthy chia pudding recipe, matcha powder improves the flavor of a classic chia pudding. It is so delicious.

While baking, I definitely use a less pricey matcha powder (check as you have often available some matcha powder for baking that are second grade). But for my matcha chia seed pudding, as it is raw, I use my regular matcha powder, Premium grade.

This pudding is a wonderful alternative to dairy products and it’s gluten-free for breakfast or dessert.

Topping?

I love to top my matcha bowl with fresh and seasonal fruits and even add some granola for a bit of crunch. Want to bake your granola ( check a crunchy homemade granola and raw cacao buckwheat granola).

Matcha is a real health booster for the body. You can read all over the net that it has a lot of antioxidants, it helps to boost metabolism and burn calories. On top, it seems to help to detoxify effectively and naturally and it calms the mind and relaxes the body. Amongst other things, it contains a lot of fiber, chlorophyll and vitamins, it enhances mood and aids in concentration.

This is a power powder that I love to include in my weekly routine.

Clearspring and Kissa are for me 2 great brands for matcha. Usually, they have an option for Premium grade or for baking.

MATCHA CHIA SEED PUDDING

I love matcha tea and more than everything I love to cook with matcha. This is an amazing matcha chia pudding, full of flavors (less boring than a classic chia pudding).

INGREDIENTS

CHIA PUDDING

  • 300 ml almond milk - (room temperature)
  • 4 tbsp chia seeds
  • 1 tsp matcha powder
  • 1 tsp maple syrup or date syrup
  • Β½ tsp vanilla powder or extract

TOPPING

  • 1 date chopped
  • Β½ kiwi sliced
  • ΒΌ avocado sliced
  • Few chunks of organic dark chocolate

INSTRUCTIONS

  • Put all the ingredients (except the matcha powder) together in a mixing bowl and whisk well for about 1-2 minutes. Wait 1-2 minutes and whisk again. Repeat it one more time to avoid lumps to form.
  • Add the matcha powder slowly and whisk vigorously until well combined.
  • Pour in a large bowl (or into 2 small bowls) and let it set in the fridge for 30 minutes at least.
  • Arrange the topping of your choice.
  • It keeps 2 to 3 days in the fridge.
