Green Arugula Pesto With Hazelnuts and Spirulina

I have a new delicious pesto alternative. It is a green arugula pesto recipe and it’s easy !

I know, I know I am a huge fan of pesto but it is because I love to make a bit pesto batch during the weekend and I use it during the week for pasta, on a toast, for pizza (endless options). So I thought what about making another version of it.

What’s inside?

This green pesto is a superfood pesto. It has hazelnuts, arugula leaves, basil, garlic, olive oil, lemon, chili, nutritional yeast flakes and my superstar : SPIRULINA POWDER.

Briefly, the hazelnuts in this recipe gives a very unique nutty flavor. You’ll noticed that the nutritional yeast flakes add a light cheesy taste to this appetizing pesto. And by adding spirulina, you simply increase your daily nutrients (and it doesn’t have the taste of spirulina).

Obviously, the recipe has a lot of arugula and it is better when they are in season

About arugula and its bitterness

It seems that there is a season for arugula. It should be early spring and fall. I have noticed than when I buy arugula off season, the bitterness is more present.

So if you desire a less bitter taste for this delicious green pesto, I would recommend to buy your arugula during its peak season and to go for young arugula leaves. Even for me this pesto is all year long a great addition to my cuisine.

Off season, you can boil or saute first your arugula leaves to remove the bitterness and then add them to the pesto.

Top Tip

Hazelnuts are rich in dietary fiber, vitamins and minerals.

They are rich in potassium, calcium and magnesium. Therefore they seem to be very good for sportsperson to recover after a sport session, to avoid cramps and to strengthen the bones. They contain as well vitamin E what is important in maintaining healthy skin, hair and nails. The B vitamins which they provide are important in proper cell and energy metabolism.

So let’s eat more hazelnuts!

GREEN ARUGULA PESTO WITH HAZELNUTS AND SPIRULINA

As I don't eat cheese (very rarely, I might have goat cheese), all type of healthy spread are a big part of my diet. This green arugula pesto is super good and super simple (and you can use it for EVERYTHING).

INGREDIENTS

  • 1 cup hazelnuts
  • 2 cups arugula leaves
  • 5-8 big leaves of fresh basil
  • 2 small garlic cloves
  • 3 tbsp olive oil
  • 5 tbsp water
  • ½ lemon juice - freshly squeezed
  • ½ fresh chili
  • 1 tsp spirulina powder
  • 2 tbsp nutritional yeast
  • Himalayan salt and fresh ground pepper - to taste

INSTRUCTIONS

  • Wash the arugula leaves and the basil. Drain them well.
  • Place all ingredients in a medium sized blender and mix until well combined. If the pesto is still too dry, add a little bit more water or oil (1 tbsp at a time) and mix it again. So easy!
