Butter Beans, Broccoli with Pesto

Delicious butterbeans, broccoli pan with a pesto sauce.

Do you always wonder how to cook butterbeans, those large white beans? We have a very nice butter beans broccoli with pesto recipe and it’s incredibly tasty.

The butterbeans are creamy in taste and they are a low-calorie food. Sincerely, they are full of goodness because they contain fiber, copper, potassium and many more.

The delicious homemade pesto we use for this recipe makes this dish extra-flavorful ! It’a a green arugula pesto but you can replace arugula by spinach or extra basil leaves or we love to eat it with our red tomato pesto too when want different flavors.

This butter beans broccoli dish with pesto is definitely full of proteins and calcium. And good for our body and soul !

When we are starving, we serve those delicious beans over a bed of (nutty) black rice ! Yum, we are hungry now…

How to cook beans?

You can use can butterbeans (we love the can without any salt added and preferably organic) or prepare the dried beans. It’s simple but we prefer to soak them overnight before to rinse them, put them into a large pan, cover by at least 10 cm of water and cook for approximately 1 hour or until tender.

Top Tip

But just remember that beans have a primary role in the diet of vegetarians because of their protein content. They are packed with a lot of soluble fiber, healthy carbohydrates, folate and iron.

They are well known for their health benefits too (heart disease, etc,..)

BUTTER BEANS BROCCOLI WITH PESTO

A completely vegan dish and totally satisfying ! Tasty and for all eaters, a success !

INGREDIENTS

  • 2 cans butter beans
  • 1 small head broccoli
  • 3 large tbsp green pesto - (try our green arugula pesto)
  • 1 pinch of fresh ground pepper
  • 1 tsp tsp olive oil

INSTRUCTIONS

BUTTER BEANS AND BROCCOLI

  • Open the 2 cans of butter beans and wash them under clear water.
  • Wash the broccoli and cut it into pieces.
  • Steam the broccoli for 5-7 minutes.
  • Heat a pan with olive oil.
  • Add the butter beans into the pan and heat them up.
  • When ready, mix the broccoli in.
  • Add the pesto sauce and mix well altogether. Let it sit for 3-5 minutes to make it flavorful. Stir occasionally.
  • Place on a plate and serve immediately.

BLACK RICE

  • Wash 1 ½ cups of black rice and place it with the double amount of water in a pan.
  • Let it cook for about 25-30 mins or cook according to the packet instructions.
