This asian ginger cucumber salad is definitely my kind of meal, full of asian spices!
Here, I combine some fresh ginger with sesame oil, miso paste and black sesame seeds and it makes this salad incredibly tasty by adding distinctive flavors.
And it’s a Thai style salad ! And it’s a 25 minutes recipe !
To make those fancy cucumber ribbons, I use a handheld spiralizer or my spiralizer LURCH (you can easily get it from Amazon). It’s worth every penny, euro, fils.
After spiralizing the cucumber for this ginger cucumber salad, you julienne the carrot and the daikon and you just have to mix all the ingredients for the dressing. Stir well and sprinkle some seeds and nori sheets on top ! The combination of those asian spices bursts into exotic flavors.

ASIAN GINGER CUCUMBER SALAD
INGREDIENTS
CUCUMBER SALAD
- 2 small cucumbers, spiralized or thinly sliced
- 1 carrot, julienned
- 1 daikon (white radish) julienned
DRESSING
- 1 tbsp miso paste (organic)
- 1 tbsp grated ginger
- 1 tbsp sesame oil
- 2 tbsp white rice vinegar
- 1 tbsp maple syrup (or honey)
- 1 lemon juice
- 1 tsp tamari sauce
- 1 tbsp water
TOPPING
- 2 tbsp black sesame seeds
- 1 nori sheet
INSTRUCTIONS
SALAD
- Wash the cucumber, cut the ends and spiralize them (or use a peeler to make ribbons).
- Peel the carrot and the daikon, before you julienne them.
- Mix the salad together in a large mixing bowl.
DRESSING
- Grate the ginger and put all the remaining ingredients together into a jar. Whisk them together until well combined (and until the miso is smooth).
- Pour it over the salad and mix well together.
TOPPING
- Sprinkle the salad with sesame seeds. Cut the nori sheet into thin strips (using scissors) and sprinkle them on top.
