Homemade Spelt Flour Tortillas, Low In Gluten
My homemade spelt flour tortillas recipe requires only 2 main ingredients, spelt flour and coconut yoghurt. It is my absolute favorite healthy tortillas recipe. Because the tortilla is soft and totally delicious. I used them over years for my lunch wraps or to eat them with my vegan chili bowl.
The satisfaction is so high when you cook your own tortilla and you know absolutely what’s inside (no preservatives, chemicals or ULTRA refined flour).
Is spelt flour an alternative to wheat (corn or soy) flour?
Whole spelt flour, made from the entire grain, is a great alternative to wheat and you won’t taste the difference.
It has less gluten than wheat and is actually easy to digest for this reason. On the other side, it contains a lof of fiber, vitamins and minerals.
Spelt flour has a higher protein content than white flour (always interesting if you have a vegan or plant-based lifestyle like me).
Finally spelt flour is a versatile baking ingredient, still light and airy. So this tortilla recipe is made with an ancient whole grain flour and is very nutritious.
A TWO main ingredients homemade tortillas recipe
To make these beautiful spelt flour tortillas, you need spelt flour and coconut yoghurt. You could replace coconut yoghurt by any other non dairy yoghurt or any other yoghurt you like. I add some salt, olive oil, dried thyme, fresh ground pepper and 2-3 tablespoons of water to complete the mixture and to reach a subtle flavor.
I let it sit for 15 to 30 minutes over the counter to let the gluten “relax”. It will actually help you to roll it smoothly. So it is an important part of the recipe.
No extra oil addition !
Because I use a non sticky skillet, I don’t need to add any oil to cook my tortilla. If your skillet is not really non sticky, you could brush it with a bit of olive oil. But not more than that.

HOMEMADE SPELT FLOUR TORTILLAS
Ingredients
- 200 gr spelt flour
- 150 gr coconut yoghurt
- 3 pinches Himalayan salt + fresh ground pepper to taste
- 1 tbsp olive oil
- 1-2 pinches dried thyme
- 2-3 tbsp water
Instructions
- Pour 200 gr of spelt flour into a mixing bowl. Add the coconut yoghurt, salt, olive oil, thyme and pepper. Using a wooden spoon, mix it together.
- Add 1 tablespoon of water first and mix it again. Add another tablespoon of water and use your hands to mix well until you have a slightly sticky dough. You may need only 2 Tbsp of water or you add another tablespoon of water if it does not form a nice dough yet. Then, knead the dough for a minute or so into the bowl or on a work surface (you might need to add a bit of flour on the surface to avoid sticking).
- Let rest the dough for 15 to 30 minutes (cover the bowl with a kitchen towel).
- After 15 to 30 minutes, divide the dough into 4 balls.
- Dust a work surface with extra spelt flour and flatten one ball with your hands. Then use a rolling spin and roll it into a tortilla.
- Heat a non-sticky skillet on medium heat. Cook the tortilla for about 45 seconds on each side (or until you see air bubbles forming). Repeat it for the 3 other balls.
- Tip : keep them in the oven (50C fan), while you finish the filling and serve it warm.
