White Sauce, Plant-based Style With Cauliflower
This is a new white sauce that I have been recently cooking at home and it’s genius. I call it white sauce, plant-based style because I use only whole ingredients and it’s butter free.
This sauce is close to bechamel, alfredo sauce or cauliflower sauce that I usually know. And I love to replace all types of bechamel or alfredo sauce with this lovely white sauce.
Actually this new healthy sauce is a basic I use now for pasta sauce, lasagna or even on the pizza. Last week, I ate it with some vegetable sticks (as a dip) and it was delish too.
Naturally, this vegan white sauce is made of tasty ingredients : cauliflower, cashews, vegetal milk, garlic and nutritional yeast (for a cheesy touch). Only 5 ingredients for this recipe !
On top of that, this sauce is quite easy to make too. You have to soak the cashews for few hours and steam the cauliflower. After that you blend all your ingredients in a high speed blender. Nobody will even notice that it’s healthy !!
The kids definitely love this white sauce with some gluten free pasta.
So I am proud to announce here a new staple recipe, that is 100% vegan and that what I love the most is its creamy (oh so creamy) texture !!

Nutritional Yeast
Like many plant-based eaters, I love to use nutritional yeast for its cheesy, savory and nutty taste and because it’s a rich source of important vitamins, minerals and protein. For me, it is one of the best addition to my diet (and by the way, nutritional yeast is not baker’s yeast which is still active).
You’ll notice that this white sauce is so yummy, thanks to this “kind of cheesy” flavor, coming from the nutritional yeast touch!

Top Tip
You can keep this vegan white sauce in an airtight container for up to 5 days. If you cook it during the weekend, you have a base for several meal during the week and you will love that.

WHITE SAUCE, PLANT-BASED STYLE
Ingredients
- ½ cauliflower head (medium sized), steamed
- ½ cup cashew nuts, soaked for at least 4 hours
- 2 tbsp non dairy milk
- ½ garlic clove, grated
- 2-3 tbsp nutritional yeast flakes
- Salt and pepper to taste
Instructions
- Soak the cashew nuts for at least 4 hours or overnight in the fridge (or in hot water for 2 hours). Rinse and drain them. Place in a high speed blender and set aside.
- Wash and cut your cauliflower into florets. Steam for 10 minutes or until soft.
- Add to the blender with the cashew nuts, 1/2 garlic clove, 2-3 tbsp of nutritional yeast*, 2 tbsp of non dairy milk, and the cauliflower and blend until smooth for approximately 1 minute. Add more milk if you want a smoother texture.
Wonderful recipe, the texture is the best I’ve obtained so far, really close to Bechamel and it tastes delicious.
I used it with pasta and it was absolutely amazing.
It was very simple and fast to make and for sure, I will use this recipe very often now!
