Yeah!! This is one of my favorite dressing from now on. It is a carrot ginger dressing with a hint of toasted sesame oil and some sweet white miso. So yummy, it’s a must try.

This delicious recipe requires a minimum of time as the carrots are raw. The list of ingredients is completely healthy : raw carrots, fresh ginger, garlic, white rice vinegar, white miso or regular miso, lime, tamari, sesame oil. If you want your sauce to be more creamy, add a piece of tofu.

Actually it is the perfect dressing for any kind of steamed or wok fried vegetables. And this is the best way to change the concept of a salad.

Most importantly the spiciness of the ginger in combination with the sweet carrot flavor is delicious.

Why white miso?

In this healthy dressing, I’ve added some sweet white miso paste from Clearspring (my favorite brand for high quality organic Japanese fine foods) which gives an extra sweet addition to this flavorful dressing. If you don’t have white miso, you can switch for regular miso paste.

Sweet white miso is a fermented soy paste rich in nutrients and healthy vitamins (made from cultured rice, water, soya beans and salt only).

Miso is high in probiotics, it helps with the digestive system. It has a salty – earthy taste (so you will reduce the amount of salt while using miso in the kitchen).

I use miso (and especially sweet white miso) for all types of recipes, check my miso caramel tart and my green miso soup and chickpea croutons.

Top Tip

Ginger is not only flavorful, it is a real health bomb.

It helps to ease inflammation in the body and to block antibacterial infections. It seems to lower the cholesterol levels too and it should help with muscle pain. Ginger helps your beautiful skin too.

Try to add every day a little bit of ginger to your meals.

How?

I try often to drink ginger infused water.

Sometimes I will grate some fresh ginger into my salad or bowl (it is deliciously spicy).

In my morning smoothie, I add ginger to make it spicy.

And when I have time I juice some ginger and I have a small shot in the morning, with some turmeric and orange juice.

CARROT GINGER DRESSING

Change your habits and sparkle your dish with this delicious dressing, ready in minutes.

Ingredients
 

  • 2 large carrots cut into pieces
  • 2-3 cm piece of fresh ginger
  • 1 garlic glove
  • 1 tbsp white rice vinegar
  • 1 ½ tbsp sweet white miso, from Clearspring
  • 1 lime juice
  • 2 tsp tamari sauce
  • 1 tsp roasted sesame oil , (or normal sesame oil if you don't have)
  • 1 tbsp sesame seed for topping, roasted (optional)
  • ¼ cup water , (or more if you need)
  • ¼ cup soft/silk tofu** , (optional)

Instructions
 

  • Peel and cut the carrots, ginger, garlic into pieces. Place them in your blender.
  • Add the other ingredients (rice vinegar, miso, lime juice, tamari, sesame oil and water). Blend until well combined, add a little bit more water if you need to.
  • Optional: add a piece of tofu for a richer and creamier consistency.

Notes

*I am a huge fan of the carrot’s sweetness in combination with the light spicy ginger. If you are not the biggest ginger fan start with a small piece of ginger.
** if you want to have a creamier consistency, you can reduce the water and add a small piece of soft or silken tofu to the dressing.
