This quinoa salad is so simple, that it’s always a basic recipe at home when I run out of ideas.

Quinoa is a whole ancient grain that is quick to prepare. You can find the white, red and black quinoa, which are slightly different in taste and texture. I like to buy the 3 of them and mix them in my airtight container where I keep them on my shelves.

It is great to cook a big batch of quinoa as it stores well in the fridge for 3 to 4 days. You can use it whenever you need it and warm it up, mixed with grilled vegetables or add it to your green salad.

This brilliant quinoa salad recipe is full of protein and so fresh. This is a perfect work lunch too! Once you have cooked the quinoa, you add to your quinoa bowl some steamed edamame or green peas, baby tomatoes, mint and coriander and spices.

What type of dressing for my quinoa salad?

I use some lemon and a splash of olive oil for a quick version but this dish will be perfect with some carrot ginger dressing too! 

How to cook quinoa ?

It is as simple as to cooking rice, but few steps are different.

You’d better rinse the quinoa before cooking to avoid a bitter taste.

And it is recommended after cooking it for 10 to 15 minutes, to let it sit covered on the side for 5 minutes.

Long time ago, quinoa was a sacred food of the Inca.

Nowadays you can buy quinoa everywhere. Mainly because it is packed with protein and all the essential amino acids (foundations for your well-being). Quinoa is also an antioxidant that can help to reduce inflammatory effects. But if quinoa became so famous, it’s mainly because it’s gluten free. So it is perfect if you try to cut gluten from your diet.

Additionally, it is a delicious grain, for lunch or dinner. You should try it out for breakfast too, it is so good when you cook it in a sweet way like my warm quinoa breakfast bowl.

BRILLIANT QUINOA SALAD

A quinoa salad is a staple I cook whenever I am running out of ideas. I cook the quinoa, add some raw vegetable (baby tomato for instance), edamame or green peas, a lot of fresh mint and coriander and you have a delicious salad that you can eat warm or cold and full of all you need to go through the day.

Ingredients
 

  • 1 cup quinoa
  • ½ lemon
  • 1 handful of mint, chopped
  • 1 handful of coriander, chopped
  • cup edamame – or you can use green peas
  • 10 small tomatoes, cut in half
  • 1-2 tbsp olive oil
  • Himalayan salt & freshly ground pepper to taste

Instructions
 

  • Let edamame defrost in a bowl.
  • Rinse the quinoa with cold water and place it in a saucepan. Add 2 cups of water.
  • Bring to a boil, lower the heat, and simmer for 10 to 15 minutes. Set aside to cool down and cover the saucepan.
  • While you cook the quinoa, steam the edamame or green peas (or microwave them, adding a bit of water). Shell the edamame if needed.
  • Cut the tomatoes in half.
  • Chop the coriander and the mint.
  • Mix the lemon, a drizzle of olive oil and all the other ingredients with the quinoa. Place in the fridge to be perfectly cold or eat it warm.
