These delicious chia pudding popsicles are a perfect summer snack treat. It’s easy too for a breakfast to go, full of protein and benefits (it’s a kind of healthy popsicles but you won’t notice it).
Sometimes you don’t know how to use your chia seeds. This chia pudding popsicles (or “protein popsicles”) recipe is a great alternative to the well known chia pudding.
Best of all, this chia pudding popsicles recipe doesn’t contain any added sugar. This is something I try to focus on, especially for the kids. Actually, the sweetness comes from the succulent seasonal strawberries ! So it’s definitely good for you !

Top Tip
No popsicles mold?!
I have to say that I plan to bring back some NORPRO ice pop maker from Europe ! The shape is great and it’s easy to insert your wooden popsicle sticks. Plus, I love their pretty appearance !
But, in the meantime, I sometimes use plastic cups (which I don’t really like).
I often use mini muffin tins (an easy and inexpensive stand-in for popsicle molds !!). How? I pour the mixture in the cup, then cover it with a piece of cling film and make a small hole in the center of the cling film. Place the wooden popsicle stick through the hole. That’s it! And they are easy to slide out once it’s ready.

CHIA PUDDING POPSICLES
INGREDIENTS
- 1 1/2 tbsp chia seeds
- 1 cup almond milk
- 1 pinch vanilla powder
- 1-2 juicy strawberries, cleaned and thinly sliced
INSTRUCTIONS
- Put 1 cup of almond milk, 1 1/2 Tbsp of chia seeds and a pinch of vanilla powder in a mixing bowl and whisk well for about 1 min. Wait 1-2 minutes and whisk again for about 1 min.
- Slice thinly the strawberries and add 2-3 pieces to each mold (cups, tins,…).
- Stir again your chia mixture and pour it into the ice-pop molds, dividing evenly.
- If you use cups or muffin tins, cover first with plastic film, make a hole and place the wooden sticks through the hole.
- Freeze them until firm (for at least 6 hours or overnight).
- You can keep them up to 4 days in the freezer.
