If you love cookies, pumpkin seeds and matcha you are at the right place. What about some pumpkin seeds and matcha cookies? Isn’t it a great combo?

The weekend is here and I am in need of a nice recipe for crunchy cookies full of healthy ingredients, without any preservatives or other bad stuffs! A plant-based cookies recipe.

So I finally created these lovely cookies recipe with pumpkin seeds and a hint of matcha powder. Matcha is relaxing and can help me decrease my stress level. Just what I need when I crave for cookies.

These cookies turn in a slight green color and makes them really rich in taste. Yummy !

I could eat cookies all year long and if it’s healthy, plant-based and guilt-free, it is a BIG YES.

Ingredients for pumpkin seeds and matcha cookies

To make gourmet pumpkin seeds and matcha cookies choose the first class ingredients you are using. You need to bake these amazing and healthy cookies : spelt flour, almond flour, pumpkin seeds flour, maple syrup, coconut oil, baking powder, matcha powder, plant-based milk.

What about pumpkin seeds?

They are the edible seeds of a pumpkin and they are concentrated with a lot of vitamins, minerals and amino-acids. They contain a high amount of copper, manganese, potassium, calcium, iron, magnesium, zinc and selenium. Pumpkin seeds carry good-quality protein. Apparently 100 g seeds provide 30 g or 54% of recommended daily allowance of protein.

It makes them very important for sportsmen and vegans who are looking for an alternative protein source.

PUMPKIN SEEDS AND MATCHA COOKIES

Matcha is a superfood I love for its benefits and its flavor ! Pumpkin seeds are a great protein addition to your diet. Those delicious cookies are again another alternative to have healthy bites at home !!

INGREDIENTS

  • 1 ¼ cups spelt flour (100gr)
  • ½ cup + 1 tbsp almond meal (50gr)
  • 4 tbsp maple syrup (or date syrup)
  • 2 tbsp coconut oil
  • 25 gr ground pumpkin seeds - (using a coffee grinder or a small blender, mix pumpkin seeds)
  • 1 tsp baking powder
  • 1 tbsp matcha powder
  • 3 tbsp plant-based milk of your choice - (I love to use cashew or almond milk)

INSTRUCTIONS

  • Preheat the oven to 160C (fan).
  • Using a small mixer, grind your pumpkin seeds into flour.
  • In a large bowl, mix well all ingredients together using a spatula. Then on a chopping board, form a long roll with the mixture using your hands.
  • Wrap the roll into cling film (or waxing paper) and keep the dough in the fridge for 20 minutes.
  • Take the roll out of the fridge and unwrap it.
  • Take a sharp knife and cut down slices approx. 1 cm thick.
  • Place the slices on a lined baking sheet and form a nice cookie with your hands. Eventually, use the bottom of a glass to flatten nicely each cookie.
  • Place it in the oven and bake it for about 13 min. Stay near and check them out regularly until they are getting a little brown/golden.
  • Take them out and let them cool down.
  • Decorate the cookies as you like! I decorate them with melted dark chocolate and roasted pumpkins, it's a hit !
